Was there a dominant flavour to the green beans and potatoes? Thyme or oregano or something like that?
You could marinate the pork chops in lemon juice, olive oil, thyme or oregano or basil (fresh or dried) and some freshly ground pepper (and maybe minced garlic or chopped shallot).
Saute the pork chops, remove and keep warm. Deglaze the pan with a little of the marinade. Toss in the green beans and potatoes just to warm through. If the chops need a little warming up, add them back in, otherwise just plate the chops with the green beans and potatoes dressed on top.
You can garnish with some fresh herbs.
Instead of lemon and herbs, you could try something a little stronger. Diced tomato, onion, and olives with fresh basil would be very tasty. I'd just saute the chops and remove and keep warm. Then toss diced onion and minced garlic into the pan. Once the onion was tender (about 5 minutes), I'd add in the diced tomato and saute another couple of minutes. I'd finish with the olives and fresh basil and fresh ground pepper, and maybe a touch of balsamic vinegar. Throw in the green beans and potatoes to warm through.
If you wanted to bake a casserole-type dish, I think you could brown the chops in a saute pan, place in a baking dish with the onion, diced tomato, olives etc. and bake, and then add the already cooked green beans and potatoes toward the end. I think it might be harder to keep the already cooked veggies from getting over-cooked though.
