I'm in a food rut...I know that's one of the biggest complaints here. I thought a challenge was in order.

Rules:

1) You don't have to complete each task.

2) You MUST post the recipe when you do complete a task.

3) You MUST have fun!

Make something "prepared" from scratch (ideas: pizza, biscuits, bread, etc...)

Ok dh loves the packets of alfredo sauce and wanted chicken alfredo last night. Of course my only from scratch recipe called for heavy cream, which I didn't have. So I looked up a sub and made the entire dish with what I had in the house.

Alfredo Sauce

2 cups heavy cream*
2 tbsp butter
1 cup parmesean cheese
salt
pepper

Mix altogether and bring to a boil. Reduce heat and cook several minutes, stirring constantly.

*Heavy Cream Substitute
3/4 cup milk
1/3 cup butter

Melt butter and stir in milk. Makes 1 cup heavy cream.

Vegan Ice Cream

Oh! I did this twice this week. We just broke out our new ice cream maker we got as a hand me down for Christmas.
I can "submit" my participation in this challenge!
The original recipe:
Strawberry Ice Cream (Vegan, Gluten Free)
(1) 13.5 ounce can coconut milk
(1) 10 ounce package frozen strawberries
¼ cup agave nectar
1 tablespoon vanilla extract
¼ teaspoon vanilla beans (optional)
1.Blend all ingredients in a Vita-Mix (or other high speed blender)
2.Pour into ice cream maker and process according to instructions
3.Serve

I did less agave nectar-- and likely 2 cups of frozen strawberries.

Pina Colada "Ice Cream"
Can coconut milk
2 cups frozen pineapple
a drizzle of agave nectar
a splash of vanilla
sprinkle of shredded coconut (if you have it)
1. Blend
2. Pour into ice cream maker and process to desired consistency.

Ooh . . . I wanna play!

Time to run to the kitchen to see what I have left.

ETA: I made coq au vin last night. Would that count under the Try something from a different region challenge or not? I've had it before - many times, so I'm thinking not. The "try" seems to be key there.

Make something "prepared" from scratch

I made cinnamon rolls from this recipe. I refrigerated them and pulled them out the next morning. It was so nice to have a hot breakfast that required no prep.

I want to join. Tonight I'm going to do a twist on the following carnitas recipe

instead of orange juice I want to try it with cola (I'm going to use a natural kind with no hfcs). I figure we'll use it for tacos tonight and tomorrow and then we'll put some bbq sauce on it and use it for sandwiches for a couple more meals.

I'm not sure this totally qualifies, but I'm going to use it.

Twist on an Old Recipe

Buffalo Chicken Strips

butter
Frank's Red Hot
chicken breasts, cut into strips
bread crumbs
salt
pepper
garlic salt
lemon pepper
parsley

Melt butter and stir in Frank's. Mix dry ingredients. Dip chicken into Frank's/butter mix and toss with breadcrumb mix. Bake until done.

I don't measure, sorry. I normally make chicken strips quite often only using an egg and milk instead of the Frank's/butter combo. They came out really good, hot, but good.

I need to try this! My husband loves Frank's Red Hot.
