An extremely controversial subject: What do you put in your chili?

I do

1/2 ground beef 1/2 ground turkey
A lot of beans, I like using kidney, white and red beans to add color (or black..I usually use 3 kinds of beans)
2-3 Bell peppers, if different colors are on sale I like red, yellow or orange ones
4 or so Jalapenos, seeded
1 big onion
Beef broth
Tomatoes
Tomato sauce
Chili powder
Cumin
Paprika
garlic
Pepper

I use the Moosewood Red, Green, Gold and Black chili recipe, with quinoa instead of bulghur wheat.

Note: A dark beer tastes the best. Porter is really good, especially in combo with the coco powder.

Mine is a very beany veggie chili.

Dark red kidney beans
black beans
small can of vegetarian baked beans (yep!)
whatever other beans i have on hand (navy, white, pinto)
Can of diced tomatoes
1-2 cans of green chilis
Onion, minced
Clove or two of garlic, minced
1/2 tsp liquid smoke
Cumin and chili powder to taste.

Top with cheese, sour cream, cilantro.

I'll add other things if I have them handy. Bell peppers, etc.

I serve the kidney beans on the side b/c dh hates beans, and I put diced onion, shredded cheese, and sour cream out for topping.

Mine's pretty basic...kidney beans, onions, garlic, green pepper, celery, ground beef, tomatoes, chili powder, sometimes a bit of black pepper...think that's everything, although I haven't made it in a while, so I'm probably forgetting something.

Oh, we serve it Cincinatti style with spaghetti, grated cheese and sometimes diced onions.

We used to use oyster crackers, too, but stopped that.

My favourite recipe uses Italian sausage meat, removed from the casings, black beans and canned diced tomato, dressed with sour cream, fresh coriander and lime.

I also make a basic ground beef, kidney bean and canned diced tomato chili.

I have a couple of vegetarian recipes, but none have replicated a wonderful couscous chili I used to buy at a vegetarian restaurant. I think I'll be searching for that recipe forever.

When I saw the title of the thread, I thought there would be more conflict about whether to use ground beef or diced/chunks of beef, lol! No Texans in the crowd?

Mine is to your not typical Chilli!
I use:
I large onion
2-4 cups soaked and cooked Pinto beans
2 cups Chopped potatoes
2 cups Chopped yams
1 cup frozen corn
1 bunch chopped spinach
2 cups chopped tomatoes
1/2 cup New Mexican chili powder (it is the best!)
cumin,oregano,salt pepper

My son likes it with ground bison meat. I prefer it vegetarian but it is good both ways
