What to EAT?!

I apologize if this has been posted TOO many times previously, but I'm trying to survive DF and SF but I'm feeling like I'm in a very big food rut. I'm pretty bored but that said, I feel like I'm doing a darn good job staying positive about this *major* change in my formerly dairy and soy-heavy diet.

My meals consist of Dave's Killer Bread, peanut butter, rice milk, eggs, fruit and veges, hummus, olives and some cereals. We're not really eating dinner as a family right now since my options are so limited.

For treats I have been enjoying ginger chews and craisins, but I'm wondering what YOU eat if you're DF and SF?

And it's BBQ season...I'm really missing my Gardenburgers. I can do fish instead, but I'm still wondering what others are eating who are in a similar situation.

Would love your thoughts or suggestions.

From your post, I'm assuming you're vegetarian?? I eat lots of meat so that's not going to help you. What about pastas? I do pasta with olive oil and herbs, pasta salads with vegies and olive oil. Lots of rice-I change it up varying from white rice to brown rice to wild/mixed grain rice. Quinoa. I did a rotation diet with my oldest dd so I'd do rice one day, oats the next day, wheat the next day. May help you just not be bored. Pancakes made from scratch with pure maple syrup. I ended up finding recipes for cookies and snacky type breads but I don't recall them now. Wondering if there's a recipe for a garden-type burger made with a grain like quinoa or rice although you probably wouldn't be able to bbq it.

I do lots of salads-again, I change it up. I've done sunflower seeds and raisins or grapes on it, you could put tuna on salad greens. Vegie soups. I had been snacking on trail mix but I've had to cut out nuts. I also can't do eggs or tuna so I'm a little limited but I also have been cheating on the dairy to see how he does. So far, not so great...

You're only dairy and soy free? You have a ton of options. List all the things you CAN eat.

Since you said you could do fish, you could poach, bake, or saute salmon, make salmon burgers, have a tunafish sandwich, etc.

pasta with sauteed mushrooms, onions, and black olives
pasta with tomato sauce
pasta with sauteed garlic, crushed red pepper, and parsley
pasta with sauteed kale, garlic, mushrooms
eggplant parmesan using pine nut ricotta (I've also done it with zucchini); I also use the ricotta as a dip for crackers (I add chickpeas to it, and puree caramelized onions, peppers, garlic in it as well)
roasted potatoes
sweet potato fries
baked potatoes with meatless chili on top or coconut milk yogurt (in place of sour cream)
roasted vegetables (broccoli, onion, mushrooms, asparagus, garlic, etc.)
curried chickpeas
roasted chickpeas
black bean soup
squash soup
pancakes/waffles
cereal with rice milk
do you eat eggs?
veggies with hummus or guacamole
chips with salsa
and more...

Thanks ladies, for the ideas. I don't eat meat but actually do eat a lot of what Kathy suggested. I'm just feeling in a rut and missing certain foods (gardenburgers, cheese and yogurt especially).

the pine nut ricotta is really good - my SIL liked it after she went dairy-free too
there are several nut cheeses available (that we can't do for one reason or another, so I can't tell you what they taste like)
the coconut milk yogurt is a good substitute for regular yogurt. You can mix it with fruit for a regular yogurt taste, turn it into dip or salad dressing, or use it on a baked potato instead of sour cream. I make it myself and add just enough sugar to feed the yogurt starter so that I can make it sweet or savory afterwards.

I've made black bean patties out of black beans and a few other things (never had a veggie burger, so I don't really know the consistency of it). Zucchini fritters made with chickpea flour or really good, and hearty too. We dip ours in spaghetti sauce.

And have you found Coconut Bliss or Purely Decadent coconut milk ice cream? It's REALLY good.
