Need your help with menu planning

I'm still gradually stepping into traditional foods, and the whole idea of less carbs, more protein and fat. I'm trying to revamp my menu planning, but I honestly don't know if I have cut enough carbs out and have included enough fat & protein into our days. Can you give me your opinion?

FYI...we have been already doing organic, free-range, pastured, grass-fed, etc. The only thing DH and I can't agree on yet is raw milk. He is not comfortable with it yet, so I'm getting organic grass-fed full fat milk.


Breakfast Ideas:
-2 eggs cooked in butter or coconut oil, piece of toast with butter, glass of milk, fruit. Maybe bacon too.
-Baked oatmeal, fruit, glass of milk.
-eggs, sausage, & cheese, peppers in a tortilla (breakfast burrito), glass of milk.
-Protein muffins, fruit, milk
-Pancakes, waffles, or French toast, (all with real maple syrup) fruit, milk [this is where I wonder if these are too high in carbs since they are so bready?)

Lunch Ideas:
-Leftover dinner
-Sandwich: 2 slices bread, turkey, chicken, or ham sliced (not lunch meat), with full-fat mayo, lettuce, and tomatoes. Normally we have eaten chips with a sandwich and I need to think of something to replace them, that is nice and crispy/crunchy, but healthier. Also, some veggies (raw) or fruit. Water to drink.
*I normally buy very healthy whole wheat bread, and haven't ventured into soaking/sprouting yet or sourdough, but that is a next step.

Dinner:
This is the easiest meal of the day for me, since it revolves around a nice size portion of meat/poultry. Plus a starch/grain, and veggies with a pat of butter per person, or olive oil drizzled over top.
-The starch is usually a 1 c. portion of brown rice or multi-grain pasta, potatoes, beans, or a slice of homemade bread with butter.

Snacks:
This is currently our downfall, and I admit it. We like carbs too much such as crackers & granola bars. At least they are multi-grain
-Cheese
-yogurt
-fruit
-veggies cut-up (raw)
-I am going to do hard boiled eggs this week.

What do you think? Is this a generally good balance of carbs/fat/protein? Please let me know where I can make any changes.

Personally, I'd skip the fruit and instead serve this with bacon or homemade sausage. You need fat and protein with those carbs instead of more carbs.

Eggs for snacks- deviled eggs, egg salad. Also, add nut butters or cheese cubes to anything carby for your snacks.

Good idea Kerry-Ann! I'm trying to do better with our fruit & veggie intake, but maybe that would not the best meal for fruit. Not sure why I forgot the breakfast meats option with that!

Just cooked some hardboiled eggs a minute ago.

How does the rest of it look?

I added up the carb. amounts for everything I ate yesterday and it was 85g. That wasn't even trying to keep it low. So I guess in reality I am doing pretty good.

Do you all keep a mental count/look at the carbs in things such as milk & fruit, that are very healthy, but do contribute to carbs? When we talk here about low carb/healthy fat and protein are we mainly talking about carbs in grains/bread/pasta ?
I ask this because I recently read the wise advice here that you can't do high fat and high carb. or you will gain weight. That's something I'd like avoid.

In general, TF does not equal low carb. I'd say the majority of TF advocates are quite pro higher carb foods that are properly prepared like soaked/sprouted grains and legumes.

Some of the folks here watch carbs or avoid foods like grains/legumes (like some of us in the primal/paleo/grain free thread) but I think we are the minority. I just feel bad at times that newbies to the TF forum might think TF=low carb or grain free b/c the primal crowd is so vocal (including me ), when TF really encompasses a wide range of diet choices and macronutrient intakes (and the majority of TF writers/bloggers I'm aware of are pro-grains and many other carb rich foods.)

That being said, I personally love how I feel eating more meat and fat and lots of veggies, including ferments, and avoiding grains and legumes and dairy. I'm also working on gut healing and food sensitivity issues, which I think really makes a difference in terms of what foods work/don't work for me.

Huh. Wow. Well that's interesting! I would have never guessed that generally TF allow for more grains!
I tried today to do very low carbs, mainly next to no grains, and I felt sick, like my blood sugar had bottomed out and I was going to pass out. My head hurt, I couldn't think clearly, my whole being was saying "EAT A PIECE OF BREAD WITH BUTTER!" Even though I ate way more fat and protein than I normally do, I still felt hungry all day.
So, I guess some of us just need more carbs and grains.

Thanks for letting me know so I can clear up the confusion in my head

It's a pretty complex thing. I don't know that some of us *need* more carbs and particularly grains, but making a big switch from high grain/carb to low grain/carb is a BIG transition, and what you described is very common part of the transition. On top of that, gluten *can* be 'addictive'--I certainly had some serious withdrawl symptoms when I first cut it out (headache, brain fog, dizziness, for at least a week) w/ LOTS of cravings for it. But, once you get over the transition time, you *can* feel a lot better. But it all does depend on you--we are each so unique...

Just want to clarify that I still feel going grain free is AWESOME, but something to be done because you really want to do it, fully believe in the benefits of it, etc. If you're *just* making the switch to TF right now, going grain free is certainly not necessary or a major tenant of being TF. (I only went grain free after 2 years of being totally gluten free, which was much easier, but still a big transition.) I guess I'm just saying, I'd recommend it to anyone, but it's not something to do 'just because'--its a big change and I think being fully aware of the why's behind it (and believing in them) is vital b/4 embarking on it.
