What's your fave way to eat eggs?

I always had/ordered mine sunny side up because that's how i was raised eating them. Then a few weeks ago DH made my eggs over medium. :

So now I realize there's a wide world of eggs to try. So what's your favorite way to eat them?

frittata with whatever we have on hand... that or quiche.

I love eggs! The only way I've tried eggs that I don't like is scrambled. I don't mind them scrambled with something else in them, but just plain old scrambled? No thanks.

Fried over medium chopped up on toast is my absolute favorite
Omelette with peppers and onions is second
Casseroles/quiches/frittatas
In burritos
Hardboiled

We eat a lot of hardboiled eggs, because DD1 loves them. We also eat them in frittatas and scrambled. Those are really the only ways we eat them plain. But we use them in quiche (my kids call it egg pie) and in sauces, and of course in baked recipes.

My fav thing is scrambled eggs mixed with cheese and wrapped in a tortilla shell.

scrambled or as an omelet. I can't eat runny eggs, even when I make eggs benedict I poach them firm.

in buckwheat crepes, and pancakes with nuts, fruit and eggs blended up and fried.

I eat them in salads too and i love egg drop soup or fried rice....eggs are almost the only animal i eat

For breakfast:

scrambled into garlic, onions and greens, and topped with hot sauce
over easy on toast --mmm! yolk-y!
hard-boiled and sprinkled with trocomare for an on-the-go breakfast
frittata with veggies and goat cheese

For lunch or snack:
egg salad with mayo, salt and a pinch of sugar
deviled!!!

When out:
eggs benedict

And, I remember reading a recipe for eggs baked into indentations made in a pan of sausage and potato hash. I always meant to try it.

We love our eggs in this house.

I love Pioneer woman's Migas, only I add meat. Anytime, anywhere!

Migas are essentially omelets with lots of vegetables, tomatoes, corn tortillas and cheese. I saute the vegetables (onions and peppers first, then other veggies) Then, I add the cut up corn tortillas, then add the eggs on top, cover with grated cheese and put into the oven. You can do it stovetop, but mine always get scrambly (yes, I made that up) that way. When it's done, slather it with hot sauce, sour cream, salsa, avocado, etc.

I think I'm hungry.

This is my favorite lunch while the kids are at school:

Poach a couple of eggs. While they are poaching, wilt some spinach. Toast a couple of slices of bread. Spread with dijon mustard. Cover the toast with a bed of spinach. Put a poached egg that. Top with grated cheddar. Pop in the toster oven to melt the cheese.

Eggs are my favorite food!

Nothing beats eggs fried over easy, if you ask me. My next favorites are poached (a la eggs Benedict), hard boiled, and scrambled. I have yet to meet an egg I don't love--unless someone leaves the whites runny, that's just nasty!

scrambled with cheese and tons of salsa on top. i actually really do not enjoy eggs which sucks because ds is on a really crappy diet which has eggs as one of the few "allowed" foods he likes.
