dairy-free birthday cake?

I can't eat dairy because my breastfed baby doesn't tolerate it. What kind of cake might I make for DH's birthday that we can all enjoy? I'm especially worried about making nongross frosting.

carrot cake? chocolate cake? spicy ginger cake?
taking dairy out of regular cake recipes does not really change the flavour much at all.

for the frosting, do you want something yummy, but not so pretty, or do you want something pretty that tastes ok?

i would happy to give you some recipes!

I have a good chocolate cake with white frosting (egg-based) that is tasty, but tricky to make.

I have made this icing recipe for several of DD's birthday cakes. It tastes very marshmallowy. I'm not a big icing fan in general, but I like this one! It looks very fluffy and pretty - and this year we put some rainbow colored sprinkle decorations on top per DD's request I started using this for the same reason as you - I was off dairy and soy for over a year with her, then she was ok with me having it (and she can now eat it too - yay!).

Another idea is to use a dairy free dark chocolate in a chocolate icing and sub coconut oil for the butter and coconut milk for any milk/cream.

Coconut milk or oil make good subs in cakes too. Or just sunflower oil.

If your looking for a "traditional" cake you can just use a cake mix, with soy and or almond replacing the dairy. Just read the box, most dont have milk products in them.

For icing store bought Duncan Hynes Homestyle is vegan, so no dairy...check petas website and they have a list of boxed food thats vegan

The recipe posted above is what I used for my daughter's 1st bday and it is AMAZING. If you do chocolate, you can also puree avocado and add to the batter for a little extra (healthy) fat and nutrients. It's a trick I use often in my baking to make me feel better about eating chocolate lol I used an eggwhite based frosting. A dairy free frosting should be simple, just sub coconut oil for butter.

That is the frosting I have failed at twice, LOL. Or at least, a version of it. I must say that candies are NOT my forte. I've pretty much never managed a meringue, which this frosting has an element of.

HOWEVER- it's worth a try and I'm going to try again if we end up having another dairy-allergic friend over. On a vegan chocolate cake, it looks so great. I topped mine (which was not remotely fluffy in the end) with strawberries. The kids loved it even though it didn't turn out.

Just substitute dairy milk with soy or other types of milk.

if you google "wacky cake" you'll find a naturally dairy/egg free chocolate cake that's absolutely delicious (from wartime when they had to do without certain foods). You can make frosting pretty easily with confectioners sugar, palm shortening, and vanilla.

I use a recipe similar to this for my milk and egg allergic DD. It is really good. It is the wacky or crazy cake recipe is that is also mentioned up thread.

Having read a lot of cake box ingredients only the very basic yellow cake is milk-free. Anything with pudding or creamy is going to have milk. (or maybe it was eggs that I found almost anywhere.) At any rate, the basic yellow cake should work.)

I never had much luck making frosting even when I could use milk and eggs. It was always too runny. I use the premade Duncan Hines with no milk.

Yup. Tastes the same. I've done it with coconut milk yogurt too, and it tastes like cream cheese frosting. But the palm shortening one is really good too. I probably have a recipe on my blog with ratios.

I've made excellent dairy-free cream cheese frosting with tofutti dairy-free cream cheese. Good for a spice/fruit/carrot cake (which turn out pretty well dairy-free, imo).
