So, making the switch to GF here...feeling kinda lost and overwhelmed...
We're broke atm so it's going to take me a few weeks to start accumulating alternative flours and things, so right now I'm trying to get started by making things that simply don't have flour in them...
One of the first things that occurred to me was that corn is GF...and I started to wonder if there's a cornbread recipe out there that is made with *just* cornmeal (no other flours). I searched the forum here and didn't see any, and I'm not sure where to look... Does anyone have such a thing?

. I'd personally avoid eating more corn when going GF - corn is really hard to digest, and a lot of people are reactive to corn as well as gluten - so eating more corn at the same time as taking out gluten can give you confusing results.
