mayo - what did I do wrong?

OK. I know its not the healthiest stuff, but I love mayo. On a lot of diff things. I decided to try to make my own since I am trying to get rid of processed food from my diet.

Well, I ended up with a whiteish thicker bottom layer with a clearish top liquid layer. I wisked the heck out of it & added the oil slooowly.

Any thoughts?

Oh yeah, I tried Alton Browns recipie.

It's perfectly healthy if you're using healthy fats.

You added the oil too quickly. For the first half or so of the oil, you should literally be adding it drop by drop.

Do you have a food processor? It's so much easier to make that way.

Don't despair. Don't throw it away. Just start over again with a fresh bowl, going even slower with the oil. Once you have the first half of your oil in, and it's a thick emulsion like it should be, then you can slowly drizzle in your failed batch. And you will magically have a double batch.

I'm not familiar with that recipe and I don't have the time to go look it up, but does that recipe include mustard with the egg yolk? I've found that just a touch of prepared mustard really helps with both the emulsification and the flavor.
