40lbs of butter - how to store??

I found an amazing deal on butter so I am picking up two 20lb cases tomorrow.
They come in one big block to put in the freezer.

How do you think I should store them? Would it make more sense to cut it up into smaller blocks? If so, what how would I store them? Should I wrap them in wax paper or aluminum foil?

I "think" that I would cut them into smaller blocks, wrap each block in wax paper and then put several blocks in a ziploc bag, pushing all of the air out and sealing and then freeze it. I don't think it would be great to have to thaw the whole 20 lbs in order to get a lb or 2 of butter when I needed it. And I don't think the waxed paper would really give enough protection for the butter. Hence the baggie...

You can "can" butter. Then it would be shelf stable and not take up all the room in the freezer.

I have a herd share for raw butter and put my extra in the freezer - its in 1/2 pound blocks which works out well.. I think I'd just cut it into chunks and wrap in wax paper and freeze that way - no need for ziplocs, ime (thats how our butter is - just wrapped in wax paper Good luck!!

you can also make ghee. It's very shelf stable.

Oops! I was sure she said 20lb cases. So I ordered two. They are 25KG cases so now I have 110lbs of butter in the trunk of my car

Thanks for the reassurance that wax paper would work. I often freeze butter (usually buy 20lbs when it comes on for $2.75 (as opposed to $3) but I wasn't sure if wax would work instead of that foil that it comes from at the store.

It's an overstock kind of deal, $2.25/lb.

I have no idea what ghee is, off to google!

I guess I should also add that butter (and all dairy products) are generally much more expensive here in Canada due to our marketing system. Fortunately the farmer gets paid more, but it's not so nice for the consumer - and buying raw products is illegal....although I did find a source of homemade butter. Soooo illegal but tempting nonetheless!
