I need a pan for eggs, pancakes, etc.. we have and love our cast iron pans for this and we've been using them for ages but we just found out that DH has really high iron levels and we're trying to cut out any extra source of iron in his diet so that means no cast iron for him I have stainless steel pans as well but they always stick horribly with eggs and pancakes and I just need something quicker and easier - help!

I would start by cutting out or lowering the iron rich food and try not to make more than an egg at this point until you get a different pan.

You could think about a coated cast iron pan, such as descoware or lecreuset, they are not as high as straight cast.

this shows the difference in using cast iron - http://www.whatscookingamerica.net/I...onCastIron.htm

Cutting the iron rich food would be more important to me at first and limit the exposure at the cooking level.

Have him give blood if he can and do it often.

You might want to look into the Sitram Cybernox line. The behavior is more "stick resistant" than nonstick (which isn't to everyone's liking; for me, this is a positive). They're not coated, so they don't need to be babied, and they're fine to soak or run through the dishwasher if necessary.

I got a "green' nonstick pan at Target. The brand is actually called GreenPan. I like using cast iron but do love this pan as well
