When I used to eat fish, I'd take as much of the skin out of the fish and leave the bones, they're soft & fine to eat. The skin tastes fishy to me. Salmon cakes are great & super easy & fast.

can of salmon
1-2 eggs
small bit of milk
crushed corn flakes
drop of lemon
sprinkle of pepper & salt

mix it all together & form patties, dip them in more crushed corn flakes to coat them. Cook them like you'd cook a pancake, cook them until they're crunchy on the outside. Tartar sauce or melted cheese goes well as a dipping sauce.

Use your favorite tuna salad recipe, and munch away!

If it's really good canned salmon, you can eat it right out of the can. I just got my first canned salmon from Vital Choice, and it is GOOD. They have no BPA in their cans, too.

Or put it on a green salad as a topping.

Keep the skin and bones -- the bones are very soft and will crumble when you mash with a fork, and they are a great source of calcium. The skin has great fat in it.

If I have canned salmon I make salmon patties or salmon salad. I pick out the big pieces of skin and bones.

For patties, I add a beaten eggs, mayo, crushed crackers, herbs (dill or tarragon, etc), squeeze of lemon, salt and pepper. Fry up in a pan with oil of choice (for this I'd use sunflower or peanut).

Salmon salad - just mayo, lemon juice, herbs, salt, pepper. Sometimes a little pickle.

I didn't know about how great calcium the bone has but that makes sense!

We make this recipe a lot
I make my own italian breadcrumbs using sprouted grain bread and seasoning. Works great and is delicious. My kids love them!

canned salmon spread right onto crackers or spooned over salad is the #1 lunch in my husband's office. As others have said, no need to do anything to it.

I mix it with left over mashed potato and fry for breakfast. Or mix with a little creme fraiche and dill and blend for a tasty pate/dip. Or add to pasta sauce.
