I both want & am intimidated by pressure cookers.

Last night I made a creamy dish with fresh limas (omg, so good! I'd never had them before) and field roast sausages, over rice pilaf. plus a salad with basil dressing from ED&BV (my daughter's fave dressing!).

I was totally freaked the first 10 times I used mine! But it's really fine. And it's so worth it! I look at it as an environmentally friendly choice, too, since you're only using your stove for a fraction of the time to cook the same food. Not to mention it doesn't heat up your kitchen for as long, so great for the summer!

How do you make the basil dressing? I have some fresh basil in the refrigerator. Plus, I have field roast sausages but DS thinks their too spicy.

I love lentils as well I had them finally this last winter in lentil soup. I was like where were you all my life. I loooove it and i will have to try the tacos sometime. I would recommend getting a pressure cooker.

Tonight I am making chicken picatta w/gardein patties. The recipe is from Conscious Cook. Also an heirloom tomato salad from the same book.

Dinner tonight was a broccoli and tofu scramble and ww toast w/ apple butter. First time I've had apple butter in years and it was so good - better than jam!

Spagetti with vegan alfredo, broccoli & Quorn tenders So fricking good!!! Whoever suggested the silken tofu alfredo in the creamy vegan sauce thread deserves a HUGE thank you!!!
