I am soaking some red kidney beans to cook. I have no idea what to do with them though. Please share good recipes or ideas! thanks.

I love to saute an onion, a few cloves of garlic, a red pepper, a jalepeno pepper, 2 or 3 tomatoes, some chili powder, cumin, salt and pepper and then stir in some cooked red kidney beans and slightly mash the mixture. It is good on its own or as a side dish. At this time of year I like to serve it with lots of lettuce and some tortilla chips for taco salad.

We have 2 favorites for kidney beans.
We make 'beans on board' - cook half an onion, half a chopped green pepper, and 1 minced garlic briefly. Add chili powder (1 tbsp or so) and toast briefly. Add kidney beans, some molasses, ketchup or tomato paste, some cumin, salt and pepper to taste. Add wheat germ to thicken (optional). Eat on toast with cheese, if you like, or plain.
I also make a coconut bean recipe with them. I may have to check I've got this right later but you just put in a big pot: 1-2 cans beans (so, about 2 cups), 1 small chopped onion, 1 can coconut milk, 1 cup water, 1-2 minced garlic cloves, 1/2-1 tsp turmeric, 3 whole cloves, 1-2 chopped tomato (can do 1 can diced - way better if fresh) and cook about 20 minutes. Serve with rice.

I made AMAZING sausages with kidney beans last week. If you have some vital wheat gluten kicking around, you can improv the rest. I used the recipe from the Vegan Dad blog:

I made my mama's red spanish rice in a deep pan with veg broth, tomato paste, garlic and cilantro; then mixed in some frozen corn and the beans when it was softish and we ate it on warm tortillas with some raw diced tomatoes. It's a favorite meal of my littles
