Beet Greens

How do I cook them... and does anyone have any recipes they can suggest?

I've sauteed them with onions and bacon, adding a little honey and broth at the end to soften them.

Same way you would cook chard. In fact i usially mix the two because i tend to get beets and chard at the same time (in my csa).

If I don't have a whole lot, I chop them up and put them into soups or tomato-based dishes. Also we eat them raw in a salad, mixed with other greens.

When they're small we mix them with our salad greens, and as they get bigger I cook them like spinach. We actually like beet tops more then spinach, they are so yummy. I've been eating them since I was a kid.

In case you didn't know, you can chop up the stems and saute them until soft and then add the greens. It gives you more food and the stems are yummy as long as they are cooked through. Here's my favorite beet green recipe...

I mix sauteed beet greens with sauted onions, basil, a garlic clove, parmesan cheese and about 6 beaten eggs, then cook it a bit on the stove top, pop a bit more cheese on top and put it under the broiler for about 4 minutes, until it is cooked through and the cheese is browned. We will eat this crustless quiche for breakfast, lunch or dinner. Plus, you can add other things to it and switch out ingredients (like switching feta for parmesan, dill for basil, or adding crumbled bacon or smoked salmon). It's very versatile and my whole family enjoys it.

Yum! You can keep the beets and just serve me the greens- I love them this way!!

Beet tops

I love them cooked the same way I do my spinach and swiss chard. I eat tonnes of it steamed then with salt and vinegar. YUM!

This is similar to what I do.

I sautee in olive oil, and when they are almost done I push them to the sides of the pan, add a little more oil, minced garlic, and red pepper flakes. I sautee the garlic and pepper a little, then mix it into the greens and cook for another minute or two. Then I turn off the heat and toss in a little apple cider vinegar.
