there's an AWESOME cookbook called Whole Grain Breads by Machine or Hand and for every recipe she details how to prepare the dough by hand OR in the machine AND how to bake in the machine OR in the oven. here's the most basic recipe i use all the time:

1 cup water
2 tbsp sweetener (i mix it up; honey, maple syrup, rapadura)
2 tbsp olive oil or butter
1 1/2 tsp sea salt
3 cups white whole wheat flour
1 1/2 tsp yeast

i do this in the bread machine and bake in oven and it comes out perfect every time!

I start with the same basic recipe and switch it up. I almost always go with
1Tb honey 1Tb organic unsweetend applesauce and 1Tb oilive oil.
I mash or whirl things in the food proccessor like bananas, apples, carrots, zukes etc. It is a good way to get rid of the not so crisp apples or over ripe bananas. Sometimes I even sneak in beans. I replace some of the flour with wheat germ and oatmeal flour (oatmeal in the food processor). If I am adding something sweet I cut back a little on the honey or skip it.
If I add something wet I adjust the water. Just peak in the machine during mixing to see how it looks. Hope this gives you some ideas.
