Are my DS's behavior issues just food sensitivities?

My middle DS (4 yo) is a challenge. He is formerly ftt, resolved when we took gluten out of my diet (I was ebf). His other brothers have multiple food sensitivities. Lately I'm wondering if his issues are just nutritional or food sensitivities. He doesn't nap but as the day goes on he gets harder to handle. When criticized, he strikes out at us physically. He's recently decided not to participate in gymnastics any more (after 2 years) b/c he doesn't want to do it without us out there with him. He doesn't want to do any activities without us by his side.

Sometimes at the end of the day, he is just completely out of control, running around the house, hitting us, hitting his big brother because he is bored and we are otherwise occupied. No amount of redirection or talking works. He recently pitched a 2 hour tantrum because we didn't hand him a toy when we were leaving a restaurant and waited until we were out of the restaurant to give it to him (our hands were full at the time). He screamed for 2 hours about wanting to go back in the restaurant and have the toy handed to him there rather than have it handed to him in the parking lot.

I think some of it is sensory. He has discovered he gets a reaction out of me if he pokes my butt and will spend hours chasing me around to try to poke me. I've tried to explain how violating it feels to me but it doesn't seem to matter.

So, normal middle child issues, cries for attention, or food sensitivity?

Sensory issues can also be food intolerances for sure. I've seen enormous changes in DS as we found all his food triggers.

The food chemical issue and the GFCF Autism connection has been studied specifically for behavioral issues, but really any food intolerance or allergy can seem to create behavioral problems b/c food -- nutrients -- are the source of our neurotransmitters.

I'd say not normal. Could be food sensitivity, nutrient deficiency, sensory issues above and beyond those caused by the first two.
