Need vegan no-bake dessert recipes

I'm hosting my neighborhood book club in a couple of weeks, and one of my neighbors is vegan (I'm ovo-lacto myself). We just do wine/desserts. I'll probably do 2-3 different options, and I'd like 1-2 of them to be vegan. I don't have A/C so the oven is off-limits for a few months (though I'm open to using my toaster oven I suppose). I'd rather not use faux-dairy products (butter/milk), but am open to using coconut oil in place of butter in a recipe. I'd love some sort of fruity dessert, like a crisp or something like that. Or maybe some sort of no-bake vegan fudge? But when I googled for that everything had faux-dairy ingredients. My fallback is chocolate covered strawberries (from semi-sweet chips) but I'd like to try something new. Thanks in advance for any replies!

This raw pecan torte with chocolate ganache is one of the greatest things I have ever tasted. Seriously, it will NOT disappoint. Omni tested and omni approved! =D

Are you adverse to using margarine? Or Earth Balance or something? Crisps/cobblers are nearly vegan anyway, just, instead of butter in the topping use margarine.

ETA: whoops, just re-read and realized you said no-bake. Must re-think. Sorry!

Fruit kebabs are simple and fun - you could even put out some melted chocolate or some kind of yogurt sauce for dipping.

If you've got a good food processor or blender, it'd be easy to do a nice fruit granita or sorbet. Those are always excellent with a crispy cookie.

Crepes could easily be vegan or not, and would be fun with whatever you like with them (peanut butter, fruit, chocolate, yogurt, whipped cream, etc).

Can't believe no one's suggested this yet! You can use it as a pie filling, too, just add a cookie-crumb crust.

You do have to bake the crust but you could either do it in the toaster oven or get a prebaked crust -- or just skip the crust & do it in small dessert cups as a fudgy pudding type of thing.

In line with Catnip's post, it seems to me that THIS would be the occasion for mousses, puddings, sorbets, or granitas. Serve them up in ramekins, or in pretty wine or martini glasses, and garnish with mint leaves. How refreshing and summery!

BTW, if you don't have an ice cream maker, you can still make granitas!

I like to make a berry fool type of thing with coconut milk and pour in to a graham crust made with coconut oil and cinnamon.

Just take a couple cups of fruit, strawberries or blueberries,a little swweetner and can of coconut milk. Sprinkle a packet of gelatin over 1/4 cup of liquid, best thing is to mash the berries with just enough sweetner, leave over a bowl and collect some juice, then dissolve the gelatin in the cold juice a few mintues, then either nuke it 30 seconds or so, or over simmering water. Then dump the fruit and coconut milk in the blender and wiz around until smooth, then pour in the gelatin and whirl a bit more. Pour on to a crust or not. you can put them in little dishes and sprinkle a few berries on top and they will sink slightly and set in the top of the dish. If you have a sprig of mint that makes a pretty presentation. I like to make 2 kinds and layer them in parfait glasses

FYI gelatin is not vegetarian. Have you tried it with agar instead?

if you have an ice cream maker, vegan coconut milk-based ice cream is THE BEST!

lavender-blueberry ice cream, rosemary, and chocolate-raspberry are my favorite flavors...

what about that raw chocolate pudding in a recent issue of mothering? anyone know what I'm talking about? avocado, honey, banana, cocoa, agave... it is heavenly. i could eat it all, by myself.

That sounds lovely - I googled for it and found a version on a blog - I'll have to try it, one of my childhood favourites was a (very non-vegan) pudding made with avocados and cream which is lovely so it would be great to have a similar vegan one!

And I think mango sorbet is a fantastic vegan dessert!

Thank you so much for all the replies! My vegan friend ended up having a last-minute trip for work so couldn't make it to book club after all. But I am definitely going to try some of these recipes for my own purposes! I also might bring a vegan dessert next month, since I try to bring something when we meet at someone else's house too.
