Going on a cruise - restricted diet

My 2 year old is on a pretty restricted diet--no gluten, oats, eggs, dairy, peanuts, tree nuts, or soy. We handle it at home pretty well, but we're going to be going on a cruise vacation in a couple of months. Does anyone have experience with this? I'm concerned about the lack of control over what he eats (no grocery stores or ability to store/prepare his food). If he were avoiding one or two things, I don't think I would be as concerned. Any thoughts? Am I worrying over nothing? Should I be doing something to prepare?

I know Disney cruises will cater to your child's food allergies (even a list like your DS's), but not sure about other companies. Can you call and see what they offer? Maybe the chef's will be able to prepare separate meals. Also, I would guess they have things like whole fruits and such that you can buy.

Eta: If it's already booked, can you view the menus online? I was just checking into our upcoming trip (not a cruise) and was pleasantly surprised to see ingredients/menus posted for restaurants in the area. Some even had GF listed next to several items. One also said to inquire ahead a time about having the chef make meals for more restricted diets. Maybe your cruise line has the info posted somewhere - or readily available if you call.
