cooking a duck, what are your favorite ways?

I'm cooking a duck this week, just wondering what your favorite ways of cooking one are?

Any way that yields crispy skin. I believe ive done the epicurious honey roasted duck recipe.

This would be the time to invest in a basting bulb if you dont have one. My last duck yielded me almost a quart of fat.

Ooh, duck. I like to roast mine, first pricking the skin all over and pouring boiling water over the skin to start melting the fat. Then I pop it on a roasting pan (the kind with the grill that sits on top so the duck gets nice and crisp and the juice pools at the bottom. I also love to cut some new potatoes in half, boil them for a few minutes, and pop them in the roasting pan under the duck so they can cook in the duck fat. So, so good.

Roast, definitely, and reserve that gorgeous duck fat! Either use right away with the rest of the meal (like veggies) or render it for later use.
