We're looking for a good vegetarian cookbook with great recipes for summer meal salads (pasta salads, grain salads, bean salads...not only green salads). I'm looking for meals that I can make in the morning and serve in the evening. During the cooler months we love to use the book, Fresh from the Vegetarian Slow Cooker...but stews don't seem so appetizing after a 110+ degree Phoenix day! :-) Any recommendations for a good cookbook (rather than single recipes)? TIA!
