How fast does food enter the milk?

DD is 8 days old, and definitely has periods of gassy discomfort. I'm not going to start eliminating things from my diet yet as that can be such a slippery slope, but I am wondering if I can at least think about the immediate meals surrounding the fussiness. For example, if I had onions for dinner, is that going to show up in the milk in the next few hours, or in the next day's milk? Or does it differ depending on the food?

my baby reacted to dairy after ~3-4 hours.

If I consumed dairy when my babies were tiny, I could expect them to be fussy and uncomfortable within 3-6 hours.

Hmmm, this is making me re-think DD's dairy intolerance. I usually saw the biggest issues the next day.
