How Do I know Jalapenos are Ripe?

I have a jalapeno pepper plant and it has SO many peppers on it... but I have no idea how to tell when they are ripe/ready to be picked! Not to mention I have no idea what to actually do with them once they are ripe...

When they get to the size you want pick 'em. If you have a ton of them you can freeze them (although they will be a bit mooshy when defrosted, they work great in salsa, sauce etc). Pickled jalapenos are yummy too.

Jalapeno jelly is good too!

How do you pickle a jalapeno? I use them in cooking but we have toddlers so in small amounts... no way we will use the gazillion my plant has decided to grow while they are fresh!

The jalapeno rings that are used on nachos and such are actually pickled. Here is a site with some good ideas.

Thanks for the link! DH loves pickled peppers and I was going to look for a recipe. That's assuming I get enough peppers!

As soon as the top of the pepper has outgrown its attachment to the stem (that's not worded well . . . umm at first the bottom of the stem covers the whole top of the pepper, then as the pepper grows its top expands beyond that) you can use the peppers.

We actually use jalapenos in their non-ripe state all the time, green jalapenos are not ripe. They turn red when they ripen and have a slightly different flavor.

As soon as they are big!

I have six jalepeno plants and they are producing like mad. I've picked about 50 so far, and there are still lots growing.

I chopped up several (sans seeds) to freeze, some will become jalepeno jelly, and some will be used in salsa.
