Baked Oatmeal w/o Sugar?

I've been eating baked oatmeal every morning to help with my milk supply (I don't like stovetop or instant oatmeal). I'm hoping to go sugar-free, though, and I'm wondering if I could do it without the sugar.

My usual recipe is 4 cups oatmeal, 1 cup milk, 1/2 cup butter, 1 cup brown sugar, 2 tsp baking powder, 1 tsp salt, and 1 cup brown sugar. I usually add a bunch of frozen berries, too.

Thoughts on alternatives? I don't want to use artificial sweeteners, either. I just don't know if it'll bake right without the sugar.

It should bake fine without the sugar - unless you're turning something out that's more of a bread. If you're only removing refined sugars, you can try stirring in some chopped dates or date sugar either one for the sweetness.

Is that recipe correct? 4 c of oats and only 1 c of liquid? Are the oats already soaked? When I make oatmeal, it's 1 c oats and 4 c of liquid.

I really don't like it liquid-y. Mine comes out more like a cookie or cake. The eggs and butter help, too, I think.. plus the frozen berries add liquid.

well, it depends how you define sugar, but you could try substituting apple cider for the milk and baking some apple chunks in it. yumm!

I don't know if this will help but I've been eating my oatmeal just soaked over night in milk (or yogurt) and fruit. I use some quick oatmeal, some steel cut and a little bit of groats, add milk and fruit and let it sit in the fridge all night. In the morning it is delicious. Strawberries are great, blueberries work well. Peaches are just coming in to season but aren't really juicy enough or sweet enough for me.

This website has real recipes for soaked oatmeal. I just lump my stuff together and sometimes it isn't very good.
