Where should I start?

Quite a while ago my uncle(who is a chiropractor) did kinesiology with me and it showed an intolerance to dairy, corn and possibly wheat. This was a few years ago and I haven't changed my diet. Dumb, I know.

So, after a lot of symptoms that seem potentially related to my diet I want to do an elimination diet. I already know dairy for sure so I'm thinking maybe I should start with corn or wheat first? Or should I cut them all out at once?

I feel like there's going to be nothing for me to eat!

We've been dairy, corn, wheat (actually all gluten), and soy free for over 2 years now, and still coming up with new things to eat. Think outside the box (of prepared foods, that is)...

here are some ideas to get you started

breakfast
bacon and eggs
buckwheat pancakes/waffles
millet porridge
cream of rice
hot buckwheat cereal
rice chex with rice or almond milk
curried chickpeas (one of DS's favorite breakfasts, sometimes w/ broccoli)
popovers
roasted potatoes

lunch
sauteed vegetables in dosas
peanut butter and jelly or honey on rice cakes
egg salad on sandwich bread (I sub avocado for mayo)
leftovers

dinner
chicken mirabella
chicken marsala
vegetable soup
pot roast
roast chicken, gravy and rice
steamed veggies
roasted veggies
eggplant parmesan (pine nut ricotta)
pizza (www.buckwheatpete.com pita recipe for crust and pine nut ricotta)
stir fry over rice
enchiladas (make your own tortillas)
teriyaki chicken skewers

Start out easy - meat, veggie, starch and work from there

They make rice pasta and I buy rice by the 25 lb. bag at the Asian market.
