soaked oatmeal - replace soaking liquid?

I'm ordering a copy of Nourishing Traditions, which I expect would answer this question, but I don't have the book yet.

When I soak oatmeal in an acid medium, can I drain off that acid liquid and cook my oats in plain water? Do I lose anything, nutritionally, by dumping the soaking liquid? I can eat sour oats, but Dh and kids will not. :-)

I would think that would be fine. The value of the soaking medium is to release nutrients inside the grains. Perhaps you would lose a little by pouring away the soaking water but I would think it would be far out weighed by the benefits of having soaked in the first place.
