Need Dehydrator Help - FAST

Last night I made a potato/zuchinni/onion/mushroom/garlic bake with some olive oil. I put it in the dehydrator at about 11pm last night, set on 125 degrees. I read somewhere that any higher makes it have a funny texture once re-hydrated. Anyway, it's now almost 11am my time, and it's still oily!! It doesn't seem close to being dehydrated to 95% yet. The recipe I used (from the book the Backpack Gourmet) said to dehydrate at 145 from 6-7 hours.

Should I take it out, even though it's greasy? Should I leave it? For how much longer? Thanks for any advice - I tried looking it up online and couldn't find any solid answer.

Did the original recipe include oil? Oil doesn't really evaporate...

Hmm, I agree. I don't know about the olive oil in the dehydrator. But I am not an expert.

ETA: If something just isn't coming out in the dehydrator I usually just give it up and pop it in the oven for a bit at a high temp. You lose the "raw" benefits, but you don't waste the food.

It did include oil
