Why does it take 2 hours to cook sweet potatoes? And do you use the skins? - Page 2

I do alot of baked sweet potatoes. Usually, I just wash, poke them and bake on 400 degrees for about an hour. The other night they were done on about 45 minutes-very soft. I always avoid using really large ones so they bake faster. They are so good baked-like candy too me.

Thanks for the ideas! I just got some more, so I will try something new this time. I would like to try steaming (I have a big pot, luckily) or I will try putting the oven hotter at 400, and another time I'll try cutting just the ends off.

I do mine on convect at 400 and it is an hr or less. I just throw them in there whole. I think the flavor is best cooked whole myself.

Definitely. I totally agree. I make sweet potatoe fries and mashed with leeks
but think baked whole they are the best and the least work.

How much is a little water? A couple of tbsp. or a cup?

I have never baked a sweet potato whole. I did boil some once and then made a sweet potato casserole, but I think I will try baking a whole one.

In fact the skkin of the sweet potato is even more nutritious. it can also be boiled and then mashed along wit honey and milk and can be eaten...
