I need to get my 7yr old a new mattress for her bed, but want it to be a good one....however im not sure what to look for. Should it be soft or firm? or inbetween or what would you recommend?

I think the firmest it can be while still being comfortable enough to sleep on is best for your back. IME if you sleep on your back then it can be quite firm, if you sleep on your side it needs to be a bit softer.

We bought new beds for us and our older dd two years ago. Every place we looked told us that there is new thinking on what's good for your back/body. It used to be that firm was the way to go, but now that's not the case. If you're really big/heavy, then you want a firmer mattress, but if not, then soft or medium is better. The mattress should cradle your body, so when you lie on it, there are no gaps between you and the mattress. On a firm mattress, many people lying on their backs will have a gap under the small of their back and their knees. This leads to discomfort. For a kid I'd go with a soft mattress (have your child try it out). I wouldn't get more than a medium for sure.
