Anyone soak flour when Vegan baking?

I'm trying to get back towards vegan eating. But, I'm really interested in soaking flours. Does anyone do this with Vegan baking? Any recipes or hints?

I soak all my grains. You just put the amount of flour the recipe calls for plus enough water or alt milk to mosten it, plus an acid (lemon, apple cider vinegar, kombucha, etc). Stir it all up and stick in the fridge overnight - bake in the morning. Obviously adjust the recipe to account for the extra moisture.

Easy peasy!
