Spinach and onion question

I am new to gardening in the pacific nw. I had a great crop of spinach that has just gone to seed. What should I do with it? If I cut it back, will it grow again when the weather gets cool? Or do I just pull it up?

And how do I know when onions are done? The greens are looking great!

I would let it go and harvest seeds from the spinach. It tastes bitter after it starts to flower. You can re-plant right now and get a fall harvest if you want.

I would just dig under the soil to check one of your onions, it just depends on how big you want it. You don't have to pull one out to check. Just put the dirt back if its not ready.
