Sage and oregano

I have some sage and oregano that has flowered to go to seed. Very pretty. But. Can I still harvest and dry those leaves below the blooms?
Or will they have turned bitter or something else equally goofy?

When mine went to seed I just cut off the flowers and the plant kept growing. The old growth was a bit worn, but the new stuff is gorgeous.

There should be nothing wrong with the old growth, but the leaves will be a bit more fibrous and potentially have less oils.
