Does anyone have a good Tofu Curry Recipe?

That I could use please?

I am now on Day 3 of no meat! And feeling pretty good, I've really improved my diet now, I make sure to eat breakfast, whereas before I would usually skip it completely.

We have fruit for mid morning snacks. We are eating together as a family, and so far have really enjoyed the process. However, I am not keen on the vegetarian sausages at all, so I'll be skipping them in future, but to be honest I didn't really need them anyway, I think I bought them in case I was really missing meat, and could fool myself into thinking they were meat, but to be honest, I'm not missing it at all! Although I know its only been three days!

So, tomorrow DH has a day off and I have some tofu to use, I've never cooked with tofu before, but know it can be used for making curry.
I have googled some, but if anyone here has a good one they wouldn't mind sharing that would be great.

Get some curry paste, whatever kind you like best. Drain, cube and sautee the tofu in oil until it gets crispy on all sides (or deep fry it if you want to get really crazy). Sautee veggies in a deep frying pan with a little oil and dump in a can of coconut milk and between 1 tsp and 2 tbs of curry paste depending on how spicy/curry you want the sauce, and salt or soy sauce to taste. Simmer the veggies till they're tender but not too soft, throw the tofu back in and let it warm up, and serve over rice.

Sounds good! I don't have any coconut milk though, so I'll have to pop out and get some tomorrow, hopefully it'll turn out ok, i'm getting there!

In my experience it's better to saute the veggies until they're tender in a bit of oil + broth + curry paste. Then add the coconut milk at the end, *right* before you serve, just long enough to heat it up. The longer the coconut milk simmers on the stove the more of it's coconut-y flavor it loses.

Also, definitely get whole coconut milk (not 'light'). It REALLY makes a difference with flavor and the fats in coconut milk are really, really good for you.

I was wondering if anyone ever subs the coconut milk with soy? My dd is allergic to coconut and regular milk.
