have you done it? dh brews beer and wants to brew root beer for our family too--we love it, but the natural and fair trade varieties are soooo pricey.

a book rec: homemade root beer, soda, and pop.
i'd suggest you visiting your local homebrew store, if there is one near you... the folks there can tell you exactly how to make it.

Here is a step by step pictorial recipe for making traditionally fermented root beer: http://www.learningherbs.com/news_issue_25.html

I’ve not tried it yet but it looks like fun!

Ive tried a few times. Soda is relatively easy. Getting the flavor of root beer right- thats hard. I have yet to find a recipe i like.

thanks, i'll check out that recipe!

the folks at our homebrew store, and the 3 or 4 that we've visited on trips this spring and summer all only have the kits with the artificial flavoring in them. we want to make it from scratch!

I made root beer syrup recently using this recipe which is very tasty. Not a traditional root beer obviously, but the syrup lasts for a year and you mix it with seltzer at whatever concentration you like. And eventually I want to make some root beer ice cream with it!
