healthy freeze ahead lunch for work

Does anyone know of any healthy, easy to eat lunches, that can be made ahead of time and frozen and then just reheated in the microwave at work?

I usually make a casserole, soup, or some kind of salad on the weekend, then just eat it all week. I would assume you can freeze most casseroles into serving size containers and freeze, but I don't go through all that. Just leave it in the fridge and reheat.

I also wanted some ideas for foods that don't need any utensils or plates....

Very simple burritos. The commercial ones all seem to have just beans, cheese, and some rice and/or meat, mixed with flavoring. Wrap them in freezer paper and you can use the freezer paper as your plate and utensil

http://lunchinabox.net/2007/02/13/sp...zen-spaghetti/ has a trick for muffin tins of spaghetti. I think they're supposed to be eaten with a fork, but could be done without a fork quite easily. They're sized to be thawed and ready to eat by lunch. Use a paper muffin cup if you want to keep it frozen and microwave to thaw.

Casseroles, which Alyantavid mentioned above, can be eaten by hand, Or use freezer paper to hold it.

I bet there's something that could be done with paper cups to make a quick drinkable soup option.

We do sandwiches ahead of time and freeze them. I make a whole bunch on Sunday, wrap them individually and then toss them in the freezer. Each weekday, DH just grabs one and by lunchtime they are thawed out, still a bit cool and taste totally fresh. This is a lot easier for me than getting up and making him lunch in the mornings since he's up a couple of hours before me or him doing it himself (he won't and will just end up drinking coffee all day!). It's just a sandwhich - nothing fancy, but it works!
