Just curious....

I'd say that a lot of medieval recipes that have survived the passage of time are for people who have other people to grind grains for them. Whole grains and soaking them so you can chew them was for poor people and countries without millers. Not exactly NT, y'know?

This book is what you want. It is awesome. The authors have combined and modernized recipes from four medieval manuscripts, and they put all of the foods into social/cultural context.

A bit on topic but a local Ren festival mentioned on it’s website that back in the day people would eat pickles and drink lemonade when it was hot. I guess to maintain their electrolytes.
