i understand Nava has also done a new version entitled "Vegan Express", if that is more your style.

Vegetarian Express is sadly out of print, but well worth it to track down a used copy perhaps at Half/Ebay/Amazon.
Vegan Express is good as well, as Robin Robertson's "Quick-Fix Vegetarian" (which is actually vegan as well).
I don't recommend the Rachael Ray book which is not really vegetarian (she has some meat ingredients in some the recipes) and heavily laden on dairy products/fattening. Yuck.
