Need a healthy b-day cake

Ds's 6th b-day party is Saturday. I was planning on making a typical b-day cake, but he's requested a "healthy" cake. He said he wants no sugar, or for it to have at least some nutritional value.

Also, he has a vegan friend coming, so I'd prefer it to be vegan. If that's not possible, I can always make an extra desert type thing for him.

I remember seeing a post a LONG time ago where someone did a "cake" made out of fruit and whipped cream, maybe? Anyone have a recipe for this?

He's ok with carrot cake, but I thought I'd get a few options then go from there.

strawberry shortcake? just biscuits (which can be very lightly sweetened with a natural sugar), homemade whipcream (With a touch of maple syrup or if your strawberries are really sweet, no sugar), sliced strawberries. you could have a ton of biscuits cut in half, a bowl of whipped cream and cut strawberries and the kids could make their own. (for the vegan kid... ummm something else?) pre-make one cake for candles for DS?

I'm impressed that your 6 yo wanted a sugar free, healthy cake.


eta: this recipe uses dairy free ice cream for a vegan strawberry shortcake. maybe you could do that? (your biscuit would need to be dairy free then though) if you don't do soy, coconut milk ice cream is so yummy

Well, to "veganize" a cake, you can substitute 1 Tbsp corn starch to 3 Tbsp water for each egg. As long as you aren't making an angel food cake or a merengue. But if you are just mixing.

ooh, the strawberry shortcake is a good idea! That sounds pretty easy, too.

Ds is confusing- he likes to eat his fair share of sugary treats! lol. But he's adamant that his cake be healthy. Ah well, I have a couple ideas to pick from now- strawberry shortcake, or carrot cake.

Not vegan, but a pavlova makes a lovely special occasion "cake" - meringue, fruit and whipped cream.

ooh, that watermelon cake is beautiful! Now I have another option.

I love the idea of the pavlova (and I know ds would!), but I'd feel guilty having only a non-vegan cake. kwim? I'll have to make it another time though. He will have a b-day party with his grandparents, I'll make it then.

We made pumpkin bread in a cake pan. It was delicious. There are lots of vegan pumpkin bread recipes online! You can add vegan chocolate chips for an extra yum factor.
