I've really been enjoying using Gail Carson Levine's book Writing Magic: Creating Stories that Fly as a jumping off point for creative writing this year. Her blog is great as well. Rick Riordan also has a great blog, Myth and Mystery

Jane Yolen has a great book called Touch Magic. It's more for adults that kids, but has some great insights into fairy tales and fantasy stories for children. I don't know if she has a blog, but if she did I would love to read it!
I wish J K Rowling would come up with something on the writing process for kids.
