Using less fat/cooking oil in meals?

I use way too much olive oil when cooking...I know having healthy fats in your diet is important, but we eat way too much (lots of nuts and seeds in addition to oils)! Many of the meals I prepare have quite a bit of olive oil (homemade salad dressings, pan-fried vegetables/tempeh/tofu, eggs etc, sauces) and other things that we eat fairly often like pancakes and baked goods have butter or coconut oil. Recommendations for a healthy amount of high quality oils seem to range between 2 and 7 teaspoons a day. Any tips/recipes for using less oil to stay in that range?

I recently cut out all oils from my diet. It actually wasn't too hard! You can saute or stir fry onions and vegetables in a little bit of water, vegetable stock, or wine. I've been dry-frying tofu. You just slice it up and cook it on a non-stick pan on medium heat. Stir it around a little to keep it from sticking. It browns just as nicely as with oil!

If you're making homemade salad dressing, can you just leave the oil out? There's a ton of oil free salad dressing recipes in Dr. Fuhrman's books. I usually just buy oil-free salad dressing though.

Baking without oil is a little harder. I've been replacing the oil with applesauce or pureed prunes. The texture is different, but the taste is great!
