I'm totally going to try this.

We too get beets in our CSA and the only thing I can do with them is pickle them. And even then, it's only my son who likes those.

I've tried roasting them, currying them... I just don't like'em.

But mixed with my mashed potatoes to make them FUSCHIA? That's worth a try. And since I already make my mashed potatoes very, uh, heavy on the garlic, I'm sure the beet flavour will be well masked.

beet inspiration had me try something new last night...it was fantastic!

we had some fresh rainbow trout that my dad caught for us and baked it...in the oven also I thickly sliced up about 4 beets, coated them with oil and herbs and on the same baking sheet put nuts and seeds.

Served up the nuts and seeds from the beets went great with the fish and the beets were like beet french fries...so absolutely delicious!!!

Like pinktatoes, I also will put some beets (or just the cooking liquid if I boil beets - the cooking liquid is nutritious and can be used with a soup as well, though you'll want more stuff in the broth than just that) in the pot for steamed rice, turns the rice pink and adds a bit of nutrition. DD likes this.

I frequently slice thin (or even use a potato peeler to shave the beets) and throw them in stir fry or whatever other sautee dish.

W love beets here (took me a long time to start caling them that instead of beetroot). I think they are just about DD's fave veggie. We love them boiled and then tossed with balsamic vinaigrette, roasted with EVOO, garlic and balsamic and I also make a yummy salad.

You cook your beets, steam themm and then cut the segments (out of the membrances) ourt of an orange and then make a dressing using the orange juice (squeeze the membrane), EVOO, garlic. Then toss with the orange pieces and fresh mint. Delicious chilled.

Also beet soup with orange zest in it. Or with goats cheese on top.

Saute the greens with garlic.

steam it and add it to humous- my girls much prefer hot pink humous!

my favorite is to grate it raw on salad with feta, red onion and walnuts add any salad dressing. delicious!

My favorite is cold beet soup. I peel and dice the beets then simmer them with chicken broth and a sauteed onion until tender then puree and top with a dollop of sour cream or Balkan yogurt and chopped dill.
I've also saw a recipe for a beautiful beet risotto topped with crumbled goat cheese I've been meaning to try.

Oooh, beet risotto! I forgot about that one! The secret is to cut it quite thin and roast it first. This concentrates teh colour so you get red risotto, not pasty pink (jamie oliver's recipe turns out this way). You essentially make risotto as per usual and add shopped up roasted beets at the end.

The recipe I have has you grating the raw beets and adding it relatively early in the cooking process. I think your version with the roasted beets would be better, though.
Thought of another thing, too - I had a gorgeous terrine of yellow beets and soft goat cheese drizzled with thyme oil at a restaurant. It was fab.

I love them raw, sliced thin in on a green salad.
Or I like to steam them to cook, then drizzle with olive oil,salt and pepper,goat cheese, and fresh thyme

I loved the recipe I made last week with the beet greens I got from my CSA. So, I went to my food co-op to buy some more greens and they only had beets with the greens removed. I should have asked why, but didn't.

I can't figure out why they wouldn't keep on the greens. Anyone know why?

Hmm... too bad, they are so yummy...

I posted a thread about beets not too long ago. I boil mine, peel them (with gloves lol) and slice. I like slicing onion and sauteeing them together in butter and olive oil. finish with a sprinkle of salt and pepper. Yummy!

Made this last night after having had beet risotto at a fancy restraunt. It was soooooo good and soooooo flavorful. And not a lot of skill involved. Mmmmm.

beets, berries, blender, freeze VOI LA!

we also love sweet potato and coconut milk pops. you can add carrot to those.
