We too get beets in our CSA and the only thing I can do with them is pickle them. And even then, it's only my son who likes those.
I've tried roasting them, currying them... I just don't like'em.
But mixed with my mashed potatoes to make them FUSCHIA? That's worth a try.
And since I already make my mashed potatoes very, uh, heavy on the garlic, I'm sure the beet flavour will be well masked.
