What do you not want to feed to the freezer??

So I just was looking through the feeding the freezer thread, really long and didn't get through the whole thing, good stuff. I am 90% vegetarian, been eating chicken and turkey now that I am preggers. We're gonna buy a freezer this month for the garage. I love to cook. I wanna feed my freezer with the bounty of summer. Do you have any advice on foods that don't freeze well? The only thing I have ever heard was soup with potatoes.

Any advice would be helpful!!

Rice.

Still edible, but wouldn't serve it to guests.

I froze rice in a stew. not so great.

I've had good luck with bell peppers. I dice them, freeze in a ziploc bag, then break off however many I need. Only for cooking, though, not for eating.

I froze soup with potatoes that was inedible.

Sour cream (by itself) doesn't freeze. When you thaw it, it's a watery mess. It can only be used for the milk/liquid part of baking, nothing else. When I make stroganoff, I'm scared to freeze the sour cream, so I just add it fresh after reheating.

I don't particularly love pasta after freezing, either. It's edible, but like someone said, not something I'd serve guests. I do it in extreme situations, like for food postpartum. Otherwise, I make double pasta sauce (macaroni and cheese sauce, spaghetti sauce, even alfredo), and I just freeze the sauce.

Anything w a high water content doesnt freeze very well - zuke, cuke, lettuce, tender herbs, mushrooms. For tender herbs, i chop and pack into an ice tray, top w water and freeze then bag. Hearty herbs just get frozen loose in bags.

Some things do much better blanched - asparagus, broccoli, corn, green beans

I dont mind pasta, the trick is to undercook it if you're going to freeze it. But i only freeze cooked pasta that is going to be baked (mac and cheese or lasagna).

Fruit pretty much all does better frozen on trays and then bagged, it freezes faster and doesnt have the time to oxidize. Although im at the point of mostly dehydrating instead of freezing fruit.

I think brown rice freezes really well. As do cooked beans, especially firmer ones like garbanzos.

Our extra freezer gets filled up with breastmilk though =)
