Hi all! I am new here and new to TF. I have Sandy Fallon's Nourishing Traditions. There is a recipe for homemade cream cheese and whey that tells me to leave the raw milk or yogurt out on the counter in a glass jar.
My question is this: Do I cover the raw milk or yogurt? Do I put a lid on it? Same question for making kefir from raw milk.
