Question about making homemade cream cheese/whey

Hi all! I am new here and new to TF. I have Sandy Fallon's Nourishing Traditions. There is a recipe for homemade cream cheese and whey that tells me to leave the raw milk or yogurt out on the counter in a glass jar.

My question is this: Do I cover the raw milk or yogurt? Do I put a lid on it? Same question for making kefir from raw milk.

Put a lid on, just leave a little space at the top for it to breathe...or put the top on a little loosely....point is to keep out other cultures floating around, but to allow the critters to breathe.

or cover it with a cloth or towel.
