Fig Recipes?

Hi everyone,

I have been picking the fig tree (also know as a ficus, I never knew that!) and doing so about 3 times a day. The figs are ripening so quickly that I have made nearly 30 jars of jam. Also, I've made a fresh fig cake (UMMM) and fig winks. The winks were consumed in 24 hours.

I want to make fig pudding durin Christmas, and I am drying figs for that. Do you have a good ole recipe that doesn't include suet (beef fat)? I'm a vegetarian and I really want to use up all of these figs, and especially make everyone a fig pudding (which is more like a fig cake, but not so bready).

We got a huge box of figs that someone Freecycled (!) in our area on Sunday. We've made a fig galette from Deborah Madison's Vegetarian Cooking for Everyone (who can live without this book???) and made fig bars today with this recipe:

Also, made smoothies with the figs as "mystery fruit" as DD insisted she did not like the figs at first. The smoothies were gone in a heartbeat and now figs rank high on her "love-it" list! Hope you find more ideas--most on the web involved broiling and drizzling with honey, wrapping with prosciutto, etc. I'd love to know how to make the jam and the cake, although I don't think we'll be so lucky to get such a huge amount again! Do you have to have special canning equipment for the jam? How are you drying them? I know nothing about this!

When are you inviting me over? I LOVE fresh figs. I really like them broken open with some ricotta and honey drizzled on top (haha, or just warm off the tree).

Or you could make a fig paste (over reduced jam) and have it with cheese like a quince paste.
