Help me revamp ds' meals and ? about bedtime snacks

I have 2 lo's-5 and 2. My 2yo has a very limited diet (we go to a mommy and me group led by speech-hearing clinic to introduce new foods).
for breakfast he will typically have a bagel with cream cheese, "cheesy" grits (sometimes i can sneak a scrambled egg in there), waffles, pancakes, or yogurt. i am thinking about grinding up some oats/quinoa in a blender to make "cheesy grits" with instead of corn-just for variation.
lunch is string cheese and crackers with apple slices, most days, but he will also eat grilled cheese, macaroni and cheese.
dinner is trickier, bc he doesn't really eat meat but will eat chicken cutlets or nitrate free hot dogs. he likes pizza, rice, pasta and 'surprise' french fries, but doesn't eat any vegetables. i always serve him what we are eating for dinner with 1 familiar food on his plate. most of the time, he will only eat the familiar food, but we are trying to expose him to the new stuff, too. Last night, he surprised me by eating tomato soup (!). i put it in a small bowl with a straw for slurping. it was very exciting. i'm looking for other soup recipes that are nutrient-dense but smooth. i think the straw was part of the appeal.
for snacks he will have apples, a banana, cheese crackers, and chocolate graham crackers. lately, both kids have been eating too much ice cream and too many cookies.
i would really like to add some more things (esp. protein) to ds' diet and also have a list of good bedtime snacks. our evening routine is usually dinner at 6:30-7, bath at 7:30 and 1 show before bed at 9. when their show is on they almost always ask for a snack. eventhough i know it's coming, i feel completely unprepared for suggestions when they ask me and dh. i am still cleaning up from dinner!! i read on some other posts to offer things like yogurt, cheese, crackers, toast with pb, etc. at bedtime. but since those things already are largely represented in most of ds' meals i need other suggestions. also, ds doesn't eat pb. i've tried almond butter, too, but no luck. i love the idea of toast or crackers with pb, i just wish ds would eat it!! dd eats everything-in comparison. she's an awesome eater!!

Carrot and coriander soup, mine is just onions, ground coriander and carrots. I soften it in some olive oil then add water/stock and cook till the carrot is really soft. Then puree

The other one my kids like is root vegetable, usually carrot onion potato and swede. Again I soften the veg in a bit of olive oil with some mixed herbs, then add water/stock and cook till really soft.

Leek and potato is another one I have found purees quite well but my kids won't eat it.

Maybe experiment with adding some beans to the soups. I haven't tried puréeing them enough to go through a straw but it may work.

Since he likes fries, would he like sweet potato fries?
My Ds likes bagel pizzas. I toast a bagel, put pizza sauce on it, then sprinkle with mozzarella and nuke it for a few a seconds. Sometimes I will put grated zucchini on it, under the cheese so it's hidden.
What about a smoothie? Use yogurt or milk to get some protein in it? It would be a sweet, cool,frozen(even) alternative to icecream.

I wish my almost-3-year-old ate as much as your 2-year-old! The one thing he loves that I'm proud of is hummus. He'll eat it for lunch with baby carrots and whole wheat mini-pitas, or sometimes with a spoon. I usually offer a second raw veggie like cucumber slices or broccoli florets, but he rarely eats them.

For the evening snack or in place of ice cream, how about homemade popsicles made with fruit and yogurt? I've been just pouring out a bit of my own green smoothies and freezing into popsicles for DS2. DS1 won't try them but he loves ice cubes so sometimes I freeze plain water onto a stick for him LOL.
