What are your favorite yet most simple foods?

What are your favorite things to eat that are really the most simplistic?

I like just plain pasta with tomatoes, olive oil and basil

Spring rolls with shrimp and veggies

Quinoa with roasted veggies

Beets with rosemary

Roasted Brussels sprouts.

Sliced tomato with mayo sandwich (which may become my breakfast in a few minutes)

Beans and rice

Pasta w/ olive oil, parmasan and basil

Burritos, I usually have all the stuff ready to go in the fridge, so I just heat up a tortilla and fill.

Come to think of it, most of the foods I really like are fairly simple. Maybe that's the reason I like them so much, easy to make!

I love, love, love simple food. Some of my faves- freshly baked bread with butter (maybe homemade jam, too); pasta with olive oil, garlic, and parmesan; salmon (grilled or broiled) with a sprinkle of salt and lemon juice; fresh veggie platters with cheese, nuts, and yogurt/sour cream; raw oysters with horseradish and lemon juice (I rarely get to eat this); EGGS; sauteed beets and onions; chocolate..this list could go on, but I'm getting hungry!

black beans & rice. pinto beans & rice. Pinto beans w/ red or green chili (which is just flour, water, pork & chili basicly).

It's funny because most of the foods listed above seem so complex to me...but I'm not a big food mixer. And I love snacking. My idea of simple, delicious foods: fresh raw fruit (of all kinds), fresh raw veggies (green beans, cherry tomatoes, mushrooms, cucumber, etc.), raw nuts, chickpeas with a pinch of salt and a bit of oil.

Kale chips are up there, though they're already outside the realm of what I would consider "simple"...but I guess almost everything I cook is simple by the above standards.

lentils. my grandmother used to make them with elbow noodles and escarole, which was yummy, but now i like them really plain. i cook them in water and then add sea salt and butter at the end of cooking. thats all. and 8yo ds consumes them like they were cheetos.

although...the other day i made a big 2# pot of lentils with chicken flavored "better than boullion" and white wine and butter. man, were they delish!

our most "favorite and easy" is pinto beans, collards (or kale - that rocks too), and corn bread. we have this once a week for dinner & it is super cheap and yummy!

fried eggs
tomato sandwich
grilled cherry tomatoes
grilled chicken
barbecue pork (even though it takes forever, it's still simple)
carnitas
tomatoes and cottage cheese
pasta with butter and parm cheese
chicken salad simply--chicken, mayo, celery

It depends if we're talking dinner, or anything else. What I would consider simple for dinner is much more work than I'd be willing to put in any other time of day. Heck, my morning smoothie is effort to me, because there are a lot of ingredients and I measure

During the day I eat only simple stuff...

Fresh or frozen fruit (my current obsession is frozen mango)

Cold quinoa with dried fruit, slivered almonds, and cinnamon (I cook a big batch of quinoa on the weekend)

Hard-boiled eggs (I make a bunch on the weekend)

Hummus with baby carrots, cucumber slices, and whole grain pita

Handful of nuts

Avocado cut in half and sprinkled with garlic salt, then eaten straight out of the shell with a spoon

Tortilla espanola. Four ingredients demand attention.

omlettes! My latest obsession.

Avocados, pink lady apples, almonds, and muenster cheese. I pretty much eat them every day.

a can of organic tomato soup
fresh fruit
a bowl of black beans with avocado

Last nigh for dinner I made black beans with spinach, tomatoes, herbs from the garden, onion and garlic, served with brown rice. It seemed simple to me because there was less than a half hour of work required!

For snacks/lunch/breakfast, our fave simple foods are:

nuts
edamame with butter and pinch of salt
rice crackers with hummus
babybel cheese
almond butter wrap (in a flour tortilla, with toasted coconut and raisins..yum)
veg sticks/slices dipped in ceasar dressing
apples
