I was going to suggest this book! It's great - can be a good stepping-stone to explore other aspects in more detail - and in the back, has a series of things people can do to take action. Awesome book!
Depending on kids' reading levels, actually, the past few years'
National Geographic has had some really good articles about: water, soil, energy conservation. Worth going through those if you've got access to them and seeing whether any of those articles would be compelling.
