Eggplant recipes?

I've got some skinny purple eggplant and small white eggplant (those are especially yummy) out in the garden. I'm looking for some really yummy recipes. I've tried a few recipes for thai eggplant off the internet, but they've been kind of dull.

Anyone have some good eggplant recipes?

We've been eating a great new meal called California Roasted Veggie Sandwiches (sometimes wraps.)

Thinly slice eggplant, zucchini, red peppers, red onions, portabellos....anything really. Marinate in a balsamic/olive oil vinaigrette for a couple hours. Grill veggies until tender. Grill some good bread slices and top w/aioli (mayo substitute, garlic, lemon juice, pepper) and then veggies.

My husband is a big meat eater, but has requested this to be a regular on the menu!

PS, I'm jealous that you have eggplant in your garden!

I LOVE eggplant in thai green curry.
I also roast eggplant tomatoes with garlic, onion pinch of s&p and tons of olive oil and serve over pasta. Simple and yummy.
Slice it length wise and grill it with olive oil.
