We keep it really simple--cotton prefolds with Mother-ease Airflow covers and stay-dry polyester liners.
We also have some Mother-ease fitteds with snaps (Sandys and the other kind, I forget the name) that a friend lent to us and I seriously LOVE those (we use the same covers and liners with them). If we were buying all new diapers for ourselves I'd totally go with those over the prefolds, just because they're faster to put on when you have a wriggly kid.
I have two Mother-Ease all in ones that I keep in the diaper bag for fast changes when out and about.
Wool didn't work for us--DD soaked right through them in the night even with a prefold, a folded prefold inside, and a liner. I use Stacinator double layer fleece covers around the house sometimes as well, because we were given them.
I strongly dislike synthetic fibre dipes because I find it hard to get them clean, and I hate velcro because it wears out so quickly (and babies can tear off velcro dipes pretty easily!), so snaps on fitteds and covers are non-negotiable for me.
