Breakfast Ideas

I need some ideas for TF breakfast.

On the weekends, we can take a bit more time / involvement with preparation, but during the week, we have to be quick and easy.

Usually during the week, we do bacon / eggs. But, I do like a little variety in life , so I need some more ideas.

I am not well-versed in the proper preparation of grains, but working on learning.

So, will you please share your menu ideas, along with whether it is fast / easy vs. longer to prepare, and tips / details on how you prepare the meal. Like, I know soaked oatmeal is supposed to be good, but what kind of oatmeal do you buy (I don't think QuickOats cuts it...), how long do you soak, then how do you prepare, etc.

Also, tips on how to prepare in bulk on weekends and the server up portions during the week would be greatly appreciated.

I WOH and usually eat my breakfast work. I make crustless quiche and cut it into 6 – 8 portions depending on who’s eating it. Usually looking at 3 days of bfast though. I make mine with eggs, milk/cream, green veggie like spinach or broccoli or kale, garlic and cheese. You can add bacon, ham or sausage and other veggies.

I also make a lot of steel cut oats on the stove and pack 3 -4 days worth to work. It keeps just fine. I too am not well versed in soaking but I have frozen waffles before. Once they are made, just freeze them on a cookie sheet. Then store in a baggie. Pop them in the toaster frozen and the crisp up just like Eggos. Make a bunch at a time to freeze.

I like quiche too, but DH doesn't care for it, so I also cook a frittata sometimes. Think quiche except just eggs, or omelet baked in the oven. You can put whatever leftovers you might have in it (really quick) or cook something new (takes a little longer). We really like bacon/tomato and sausage/bell pepper, or ham/spinach when it's just me and the DDs. It's fancier than just plain bacon and eggs.

My recipe is 6 eggs, 1/3 cup mayo, a splash of milk, and about 1.5 cups of whatever I want to put in it (plus salt, pepper, paprika, whatever seasonings you like in eggs). Whisk all that together and melt some butter in a skillet. Pour in the egg stuff and put the whole thing in a 350 degree oven for about 20 minutes (until the eggs are set). Top it with cheese and take it out when the cheese is melted. If you're using leftovers the prep time is minimal and you can do something else while it bakes.

You can also bake mini versions in muffin tins!

Oh I forgot, breakfast burritos! Scrambled eggs + veggie + meat/beans + cheese, wrapped in a tortilla. Freeze them on a baking sheet and transfer them into a bag after they're frozen. That way they stay separate and you can thaw as few/many as you need. I make those on the weekends a lot.

oatmeal and smoothies are our quick meals here. (oatmeal isn't quick but you can make a bunch and reheat it fast.)

For oatmeal, I buy steel cut oats. I put them in about an equal volume of water, with a spoonful of yogurt or whey, stir it up and leave it on the counter. After 1-4 days, I cook it or refridgerate it. To cook, I strain it, add water and raisins(I don't know how much, I just keep adding more as needed as I cook it) it will take a while over medium/low heat, maybe half an hour, stirring occaionally. eat it right away, or reheat in the morning. (with some dairy fat either butter cream or milk and some natural sweetner. I like molasses (particularly if I use yogurt instead of milk), or maple syrup, honey or palm sugar work too.)

Smoothies for me are really simple. I throw in the blender an organic fair trade banana (no fruit seems to sweeten a smoothie like a ripe banana. even ripe strawberries go with a banana for the sweetness, because even a ton of strawberries don't make it sweet enough and I don't want to add sugar of any sort), some milk or raw milk, a little yogurt or buttermilk and an egg yolk in the blender. Sometimes I'll throw in some other fresh or frozen fruit, or some cinnamon and nutmeg, sometimes not. DP and I split the smoothie.

Cook extra for dinner. Reheat in the morning. Have for breakfast. Think outside the breakfast box!

many sweet items (coffee cake style items) can be made with lards, lots of butter and eggs- dried fruit for sweetness if you want to go that way

cinnamon raisin sourdough bread with whipped cream (could use cream cheese also) is yummy

the grownups in our house are pretty much grain free these days but here is how I make steel cut oats (still give it to the kids maybe 3x per week).

At night: Bring the water to a boil. Dump in the steel cut oats. Cover. Leave in place (on the now warm stove) overnight. In the morning, heat on low heat and stir in some salt- takes literally a few minutes. You might need more water. I would make a couple days worth at a time and then refrigerate and reheat the amount you need for one breakfast. 1/4 cup oats and 1 c water for a serving. (roughly).

french toast on sprouted bread is tasty and fast.

but weekdays, we pretty much have the same thing every day and just change up the condiments: scrambled eggs, avocado, and a modest serving of fruit. If you aren't dairy free, you could have some greek yogurt with nuts or seeds and berries.

I love the grain free granola here from girl gone primal's blog. I make up her (gigantic!) recipe and it lasts us a while. We generally eat that for a treat though, now that we aren't doing sugar or much grains.
